Thanksgiving – Italian Cuisine

Carbonara

Come March we enter into autumn and from there it’s but a short step to winter, or at least as much of that season as ever makes it presence felt in Brisbane. Isn’t it funny how whenever there is even the slightest hint of a chill in the air people talk about the need for “comfort food?” Was there ever a cuisine more suited to comfort than Italian food?


From the north of the Italy to the south, one could spend an entire calendar year sampling the various different regional dishes and never encounter the same meal twice. There are the staples of Spaghetti Bolognese, Pizza and Lasagne through to the more sophisticated Ossobuco or Linguine Seppia Nera with Gorgonzola; quite literally there is a dish to delight every taste bud.

From within the great pantheon of Italian cooking I would have to nominate Spaghetti alla Carbonara as a personal favourite. It has everything – flavour, history and an economy of ingredients that suits all budgets. Its’ simplicity is most likely a result of its working class roots – as the dish of choice of labourers and manual workers, who used to cook it up over a hardwood fire and charcoal embers.


For this and all the other wonderful Italian fare, the creation of a vibrant and very taste-sensitive people, we truly say thank you and ‘deliciosa’.

The season of Lent asks of us for sacrifice and the foregoing of many things, but an attitude of joy and gratitude should not be amongst them.
